Thai Coconut Soup

Thai Coconut Soup also known as “Tom Kha” will be your new favorite soup!

COOK SHRIMP

Add 1tbsp oil to a pot. Sauté shrimp over medium-high heat until fully cooked. Remove shrimp from the pot and set aside.

COOK VEGETBALES

Add 1 tbsp oil to the same pot. Add in carrots and onions and cook for 4-5 minutes. Add in garlic and ginger and cook for an additional minute.

SIMMER BROTH

Stir in curry paste, broth and fish sauce. Bring to a boil then reduce to a simmer and cook for 10 minutes.

ADD COCONUT

Stir in coconut milk and mushrooms and cook for 3-4 minutes. Add the cooked shrimp back to the pot along with the lime juice and cilantro.

Stir to combine and serve immediately.
