This Parsley Pesto Gnocchi is pan fried then tossed with an easy parsley pesto sauce.

Add parsley, garlic, pine nuts and parmesan cheese to a food processor. Pulse until combined then slowly drizzle in olive oil. Season with salt and pepper to taste and set aside.

Heat 1 tbsp of olive oil in a skillet over medium high heat. Add in gnocchi and cook until golden brown and crispy, 2-3 minutes.

Add the pesto to the pan and toss to coat the gnocchi.
