 Instant Pot Carnitas

These Instant Pot Carnitas come out so tender and juicy and then are broiled to crispy perfection.

Brown beef

Select the SAUTE option on the Instant Pot. Add oil, then brown the cubed pork in batches. Transfer each batch to a plate. When finished, press CANCEL.

Pressure cook

Add the remaining ingredients to the instant pot along with the pork. Cover and cook on HIGH pressure for 30 minutes. Remove the bay leaves.

Shred & broil

Transfer the meat from to the rimmed baking sheet. Shred the pork with two forks and mix in 1/4 cup of the juices. Set the broiler to high and broil for 5 minutes.

Serve immediately with cilantro and lime wedges for serving!
