Everything Bagels

These Everything Bagels make the perfect breakfast and freeze really well!

Mix yeast & water

Combine water and yeast in a small bowl and let sit for 5 minutes until the yeast is dissolved.

Mix dry ingredients

In a stand mixer with the hook attachment combine flour, brown sugar and salt.

Knead dough

On low slowly add the yeast mixture and increase the speed to medium and beat for 8 minutes.

Proof

Shape the dough into a ball and place in a greased bowl, turning to coat all the sides in oil. Cover the bowl with a kitchen towel and allow the dough to rise for 1 1/2 hours.

Make bagels

Line two baking sheets with parchment and place a wire rack on a third. Divide dough into 8 balls, poke a 1 1/2–2-inch hole in each center.

Add in boiling water

Preheat oven to 425°F. Fill a pot with water, add honey, and bring to a boil, then simmer. Drop in bagels, 2-3 at a time, cooking 1-2 minutes per side. Place on wire rack, brush with egg wash, and add seasoning.

Bake

Place bagels on baking sheets and bake for 20-25 minutes. Let cool on sheets for 10 minutes, then transfer to a wire rack to cool fully.
