When I go out for fast food Chipotle is always my go to. We are lucky enough to have a restaurant similar to Chipotle called El Diablo right down the street from us. They serve a chicken burrito bowl loaded with veggies and rice. It is everything you love about a burrito without the tortilla. Along with the burrito bowl they serve a chipotle ranch dressing to go alongside that is out of this world.

I decided to make these burrito bowls at home and put a healthier spin on it. It is easy to make and takes less than 30 minutes time!

This burrito bowl is loaded with fresh cherry tomatoes, cilantro, brown rice and black beans. It is served with a Spicy Chipotle Ranch dressing.

The base of this burrito bowl is my Cilantro Lime Brown Rice. Simply brown rice tossed with fresh squeezed lime juice and cilantro. I use boil in a bag brown rice to speed up the dish.

If you are not a fan of brown rice you can always substitute white or jasmine rice.

The cilantro and lime brown rice is so easy to make. While the rice is boiling throw together the lime, cilantro, and olive oil. Toss the cooked rice in the vinaigrette and season with salt and pepper. Done!

Layered on top of the rice is my Spicy Chipotle Chicken. To save time and add flavor I marinate the chicken overnight with some chilies in adobo and a bit of oil. The chicken is amazing! Little effort for tons of flavor!  The chicken has a smokey spicy flavor thanks to the chiles in adobo sauce.

You can grill or saute the Adobo Marinated Chicken. I like to marinate the chicken and make the dressing the night before so they both have time to sit. Therefore when its time to eat I cook the rice and chicken and toss everything together. This meal can be made in under 30 minutes!

To go with the chicken burrito bowl I made a spicy Chipotle dressing. This dressing packs a bit of a punch. It is smokey, spicy, and creamy. To make the dressing I add chiles in adobo, sour cream, mayonnaise and cilantro. A little bit of this dressing goes a long way. If it is too spicy for you you can always add more sour cream or mayonnaise.

Feel free to add some of your favorite toppings, lettuce, sour cream, jalapenos, or corn salsa. The possibilities are endless. I skipped on the cheese and heavy guacamole for a lighter option.

Ingredients

Healthy Chicken Burrito Bowl

  • 2 thin boneless skinless chicken breast
  • 1 tablespoon chiles in adobo
  • ½ tablespoon extra virgin olive oil
  • cilantro lime brown rice, recipe follows
  • ½ cup cherry tomatoes
  • ¼ cup black beans
  • 1 tablespoon cilantro, chopped
  • lime slices for garnish
  • chipotle ranch, recipe follows

Cilantro Lime Brown Rice

  • 1 package of instant brown rice (boil in bag) (I package equals 2 cups)
  • 1 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon extra virgin olive oil
  • 1½ tablespoons cilantro, chopped
  • ¼ teaspoon salt
  • pepper to taste

Chipotle Ranch Dressing

  • 1 tablespoon chiles in adobo
  • 1 whole chili from can of chiles in adobo, small dice
  • ½ tablespoon cilantro, chopped
  • ¼ cup mayonnaise
  • ¼ cup sour cream

Instructions

Healthy Chicken Burrito Bowl

  1. Marinate the chicken with the chiles in adobo sauce and oil in a Ziploc bag. Refrigerate for at least an hour or overnight.
  2. After the chicken has been marinated add the chicken to a large skillet over medium high heat. You will not have to add oil or butter to the skillet. The oil from our marinade should keep the chicken from sticking. Saute until fully cooked and both sides are caramelized. Takes about 8 minutes.
  3. Take off the heat and allow the chicken breast to sit for 2 minutes before cutting into them. If you cut into the chicken breast right away the juices will drain from the chicken and will leave your chicken dry.
  4. Cut each chicken breast into medium size cubes and set aside.
  5. To assemble our chicken burrito bowls fill each bowl with half of the cilantro lime rice, chipotle chicken, tomatoes, black beans, cilantro, and limes for garnish.
  6. Serve with chipotle ranch dressing.

Cilantro Lime Brown Rice

  1. Cook brown rice per packaging instructions. If you do not have boil in a bag rice you can always use regular stove top brown rice. While the rice is cooking, add garlic, lime juice, and oil to a medium bowl. Whisk to combine. Add cilantro and cooked rice to the vinaigrette. Toss to coat. Season with salt and pepper.

Chipotle Ranch

  1. Combine all of the ingredients together in a small bowl. Stir to combine. Chill until ready to serve.
