One Pan Italian Chicken Skillet

An incredibly easy One Pan Italian Chicken Skillet that can be made in 15 minutes or less! Serve alongside a salad or over pasta.

chicken with tomatoes and mozzarella

A simple dish can taste so good. Especially a one pot dinner. Easy dinner. Easy clean up. Just how I like it.

This dish takes only 15 minutes to make start to finish and is incredibly easy. Simply sauté chicken and garlic, stir in crushed tomato and simmer. Sprinkle with basil, Parmesan cheese and mozzarella. Place under the broiler until your cheese in melted. Done. How easy is that??

Italian Chicken Skillet

For the recipe I used skinless boneless chicken breast. One of the most important things about this dish is starting with a thin chicken breast. Starting with a thin slice of chicken shortens the cooking time and provides a tender chicken breast.

You don’t have to make your own tomato sauce for this recipe. The sauce simmers with the chicken creating a thick flavorful tomato sauce. The crushed tomatoes turn into a thick creamy sauce/paste that is sweet and full of flavor. I added some crushed red peppers for a little heat. If you do not like spice just omit.

I used mini mozzarella because that is what I had on hand. You can always substitute pre-shredded mozzarella cheese to save some time slicing.

  • I made this the other night for my bf. Followed the recipe exactly, topped w/provolone, mozzie, and parm, and served over angel hair pasta. It was fabulous. Perfect amount of food for 2 people.

    • Hi Bryn! Yes I use crushed tomatoes not drained. The sauce will simmer for a bit and thicken up! Let me know if you have any more questions. Hope this helps!

      Thanks,

1 cup of crushed tomatoes does not seem enough for the sauce. Was that a typo? It sounds delicious! Going to try but add more crushed tomatoes.

    • Hi Cathy,

Thank you! Yes it is 1 cup of crushed tomatoes. The sauce gets super thick and is the coating for the chicken. If you would like extra to serve with pasta go ahead and cook extra sauce separately or add more sauce to this dish. I served the chicken by itself with baked ziti on the side.

      Thanks!

This was super delicious! We just made it in Nepal. We didn’t have canned tomatoes so we diced up fresh tomatoes really small and it still worked 🙂 Thanks for the recipe!
