    Lasagna Soup

    If you love lasagna you are going to love this mouthwatering soup recipe. All of the rich flavors of lasagna are packed into a steaming bowl of soup — delicious, classic pasta disguised as warm comfort food.

    Lately I’ve been craving soup a lot. I’ve been making all of my favorites like my Turkey Meatball Vegetable Soup and my Thai Coconut Soup. There’s just nothing like warming up with a hot bowl of soup on a chilly day, and there have been a lot of those lately.

    This lasagna soup is loaded with crushed tomatoes, fresh parsley, onions, garlic and pasta — just like the original pasta recipe. I lightened up this full-flavored soup by using low-sodium chicken broth as one of the bases for the soup. Each bowl gets a sprinkle of mozzarella cheese, but no cheese is added to the soup during cooking if you prefer little or no dairy. You could also omit the heavy cream added at the end to go dairy free.

    Ingredients

    • Noodles: I used 10 lasagna noodles that I broke into bite-sized pieces, but you can also substitute your favorite gluten-free or veggie pasta. Any shape or size will do!
    • Meat: You’ll need about 1/2 pound of ground beef plus 1/2 pound of ground sausage. You can substitute ground turkey or other proteins as desired.
    • Sauce: For this recipe, I used a 24-ounce can of store-bought tomato sauce, but you can definitely whip up a homemade sauce, too.
    • Other seasonings: I also ended up using an onion, garlic cloves, chicken broth, Italian seasonings, heavy cream, and salt and pepper for this delicious lasagna soup.

    How to make Lasagna Soup

    Get everything you love about lasagna with half the work! This easy one-pot soup takes less than 30 minutes to make, start to finish.

    • Brown the meat: First, add oil to a large pot or Dutch Oven, then add in ground beef and sausage. Cook the meat until lightly browned and no longer pink.

    • Sauté onions: Next, you will add in your diced onions and cook for 2-3 minutes until slightly tender. Then, add garlic and cook for an additional minute.

    • Add sauce and noodles: Then pour in your tomato sauce, add the lasagna noodles, and pour in the chicken broth and Italian seasoning.

    • Simmer soup: With all of the lasagna soup ingredients combined, bring to a simmer and cook for about 15-20 minutes, stirring occasionally. When the lasagna noodles are tender, stir in heavy cream and season the soup with salt and pepper to taste.

    • Garnish and enjoy: Finally, portion your soup into bowls, garnish each with parmesan cheese and any of your favorite toppings, then enjoy!

    Tips for making the perfect Lasagna Soup

    • Change up the pasta: Feel free to substitute your favorite pasta type of pasta in this recipe. Cavatappi, spiral, rotini, ziti, penne or macaroni would all work great.  If I have zucchini, spinach, kale or eggplant on hand I love to sneak them in this soup as well.
    • Meal prep: This soup can easily be made ahead and frozen to use for quick dinners.
    • Choose your ideal consistency: Some prefer a more liquidy soup, while others like a thicker consistency — either way, you can always adjust the thickness of your soup by adding more or less chicken broth.
    • Season the meat: If you’re looking to turn up the flavors of your lasagna soup, you can season your ground beef and sausage before adding in the liquid ingredients.

    Storage Instructions

    Your lasagna soup will last up to 3-4 days in the refrigerator when stored in an air-tight container. You can also freeze this soup for up to 5-6 months when properly stored in a gallon freezer bag.
