The Easiest Fruit Salad You’ll Ever Make
Even though the “official” start to summer is a way’s away, I can’t help but take advantage of all the seasonal fruit. I made this fruit salad with a combination of blueberries, strawberries, blackberries, pineapple, and kiwi. But any fruit combination will work! I just like to use what’s in season and on sale.
This Summer Fruit Salad is super refreshing, light and healthy. Fruit salads are a great way to satisfy a sweet tooth in a healthy way.
If you find yourself with leftover fruit this summer, you’ve got to make fruit salad!
Key Ingredients
You only need fresh, in-season summer fruit, the juice of half a lime, some honey, and fresh mint leaves to make this super simple Summer Fruit Salad recipe! I used blackberries, blueberries, kiwis, pineapple, and strawberries because that’s what I had on-hand and what was in season, but you can use any fruit you like. Mangoes, watermelon, cantaloupe, honeydew, and raspberries would also be delicious!
How To Make This Easy Fruit Salad Recipe
Simply wash, dry, and slice the fruit, if needed, and place in a large mixing bowl. (I like a glass bowl because you can see all of the gorgeous fruit throughout this salad.) Then, in a separate bowl or glass jar, mix together the honey and lime juice until combined and drizzle it over the fruit salad with chopped mint leaves. Toss to combine, and enjoy!
How To Make Honey, Lime, and Mint Dressing
The dressing is simple. All you need is fresh-squeezed lime juice, mint and honey. The honey gives the fruit an extra sweetness and the lime gives it a bit of tang. The honey also helps to bring out the juices in the fruit.
I like to make this the night before serving to let all of the flavors marry together in the fridge.
Variations
- Add in all of your favorite fruits! I used lots of fresh berries, kiwis, and pineapple, but melons, mangoes, papaya, jicama, cherries, and apples would work well with the honey, lime, and mint dressing, too!
- Spice it up with some chili powder or diced jalapeños mixed in with the dressing.
- Blend this up, and freeze it to make popsicles!
How To Serve Summer Fruit Salad
Serve with some whipped cream on top, and you’ve got a delicious, healthy dessert! It’s also good with vanilla ice cream or atop a “fruit pizza cookie,” which is a giant sugar cookie topped with vanilla frosting and fresh fruit. This is also a great way to use up leftover fruit in your fridge!
This fruit salad is perfect for summer gatherings and would be a super easy side dish to make for Memorial Day. It’s easy to throw together, healthy, and refreshing!
Storage Instructions
Store the assembled fruit salad in an airtight container with a secure lid in your refrigerator for up to 4 days. While we did not test freezing this recipe, you could do so to turn into smoothies or popsicles. We would not recommend freezing and then serving, as the fruits will break down and turn soft during the thawing process. This Summer Fruit Salad is best enjoyed fresh!
