Carrot Cake Energy Balls

These Carrot Cake Energy Balls are loaded with fiber, protein, and all the good fats.

SHRED CARROTS

Shred carrots in a food processor or with a grater.

MAKE BATTER

Add carrots, oats, raisins, walnuts, cinnamon, nut butter, vanilla and maple syrup to a large bowl. Toss to combine then refrigerate for 30 minutes.

FORM BALLS

Roll into balls (I got about 12 balls)

Store in the fridge in an airtight container for up to a week!
