Cauliflower Casserole

This Cauliflower Casserole is super creamy, cheesy and loaded with veggies!

Bake cauliflower

Preheat oven to 425°F. Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet. Bake for 15-20 minutes.

Cook bacon

Place bacon in a single layer on a baking sheet. Bake at 425°F for 15-20 minutes until crispy. Cool on paper towels, then crumble. Set aside.

Make sauce

Melt butter in a saucepan. Stir in cornstarch, whisking for 2 minutes. Gradually add milk, mustard powder, salt, and pepper. Cook for 3-4 minutes, then add cheeses and whisk until smooth.

Assemble casserole

Spray a 9x9 pan with cooking spray. Add roasted cauliflower and top with cheese sauce. Switch the oven to broil and cook for 5 minutes until browned.

Sprinkle with the crumbled bacon and chives. Serve immediately and enjoy!
