Crispy Parsley Pesto Gnocchi! Homemade potato gnocchi pan fried then tossed with an easy parsley pesto sauce.
Add parsley, garlic, pine nuts and parmesan cheese to a food processor. Pulse until combined then slowly drizzle in olive oil. Season with salt and pepper to taste.
Heat 1 tablespoon of olive oil in a large skillet over medium high heat. Add in gnocchi and cook until golden brown and crispy on the outside, 2-3 minutes. Make sure to keep an eye on it so it doesn't burn.
MIX
Add the pesto to the pan and toss to coat the gnocchi.
Serve immediately with extra parmesan for sprinkling if desired.
