German Potato Salad

The BEST Warm German Potato Salad Recipe loaded with crispy bacon, tender baby potatoes, red onions, a tangy dressing and tons of fresh herbs!

BOIL POTATOES

Place potatoes in a large pot and add enough water to cover the potatoes. Bring to a boil and cook until the potatoes are tender, about 15 minutes

COOK BACON

Add bacon to a large skillet and cook until golden brown and crispy, 5-6 minutes. Remove the bacon from the pan and set aside. Leave the bacon grease in the pan.

MAKE DRESSING

Add the onion to the bacon grease and cook until browned 2-3 minutes. Add in garlic and cook for an additional minute. Add in vinegar, mustard and return the potatoes back to the pan.

ASSEMBLE

Add the cooked potatoes to the pan and toss so combine.

Sprinkle with the fresh herbs and serve warm!
