This easy German Potato Salad is a nice change from the traditional mayonnaise potato salad! It has the perfect amount of smokiness, acidity and tang.

Place potatoes in a large pot and add enough water to cover the potatoes. Bring to a boil and cook until the potatoes are tender, about 15 minutes or so.

Add bacon to a large skillet and cook until golden brown and crispy, 5-6 minutes. Remove the bacon from the pan and set aside. Leave the bacon grease in the pan.

Add the onion to the same pan and cook for 2-3 minutes. Add in garlic and cook for an additional minute. Add in vinegar, mustard and return the potatoes back to the pan.
Sprinkle with the fresh herbs and serve warm! alongside Grilled Chicken Breast, Steak of Pork!
