This Gorgonzola Gnocchi w/ Shrimp is the ultimate comfort meal for cheese lovers!

Bring a large pot of water to a boil. Cook gnocchi according to package instructions. Mine took about 2-3 minutes. Drain and set the gnocchi aside.

Heat a large skillet with 1 tbsp of olive oil over medium high heat. Add in shrimp and saute for 3-4 mnutes. Remove the shrimp from the pan and set aside.

Add the remaining tablespoon of oil to the same skillet. Stir in onions and saute for 3-4 minutes. Add in garlic and cook for 1-2 additional minutes.

Stir in heavy cream and milk and simmer for 2-3 minutes then stir in the gorgonzola and parmesan cheese, until thickened. Season with salt and pepper.

Add in the cooked gnocchi and shrimp and toss to coat them in the sauce.
Serve immediately with fresh chives for garnish. Enjoy!
