This creamy Lemon Parmesan Gnocchi recipe is so easy to whip up and so amazingly flavorful!
Heat olive oil in a skillet over medium high heat. Add in onions and sauté for 4-5 minutes, or until golden brown in color. Add in garlic and cook for another minute.
Stir in chicken broth and scrape the bottom of the pan. Add in heavy cream and lemon zest. Simmer for 3-4 minutes or until the sauce thickens slightly. Add in the gnocchi and cook for 2-3 more minutes.
Turn off the heat and stir in the juice of half a lemon, fresh chopped parsley and season the dish with salt and pepper to taste.
Serve immediately with extra parmesan cheese for serving
