Add the diced potatoes to a large pot and cover with water. Sprinkle with salt and bring the water to a boil. Cook the potatoes for 15-20 minutes or until fork tender.
Drain really well and add the potatoes back to the pot. Add in butter and mash potatoes. Add in the heavy cream and continue mashing until the potatoes are smooth and lump free. Serve immediately as is or with any of the toppings below!
Garlic Mashed Sweet Potatoes
After the potatoes have been mashed immediately add in the garlic, parsley and parmesan cheese. Season with pepper to taste and serve immediately with additional parsley for garnish, if desired.
Cinnamon Nut Topping
Heat walnuts and butter over medium high heat in a small skillet. Toast the nuts for 2-3 minutes stirring constantly. Remove from the heat then add in brown sugar, cinnamon and salt. Sprinkle on top of mashed sweet potatoes and serve immediately!
