Preheat air fryer to 400 degrees. Add vegetables to a large bowl and drizzle with olive oil and spices. Toss to coat the veggies.
Spray the insert of the air fryer with nonstick cooking spray. Add in vegetables and cook for 8 minutes or until tender. Season with salt and pepper to taste and serve immediately with parmesan cheese, if desired.

Give the air fryer basket a good shake halfway through the cooking process to make sure the veggies aren't sticking.Don't overcrowd your insert, or else the air fried veggies will turn out mushy.Go light on the oil. Too much, and the vegetables will become oversaturated and not crisp up.Slice everything in small pieces and thin strips or rounds to make sure they cook evenly in the air fryer.
