Melt butter in a large skillet and add in onions.Cook for 10 minutes or so on medium heat stirring occasionally. Adjust the heat if they are getting too much color or not enough.
Stir in flour and cook for one minute.Pour in red wine and scrape the bottom of the pan to remove some of the brown bits off the bottom.
Whisk in broth, Worcestershire sauce, sugar and fresh herbs. Bring to a simmer and cook for 3-4 minutes or until thickened. Season with salt and pepper to taste.

Heat olive oil in a large skillet over medium high heat.Add in sausage and cook for a couple minutes on each side or until fully cooked.
Assemble
Serve the cooked sausage with onion gravy, mashed potatoes and peas. Enjoy!
