Total Time: 45 minutesmins
Servings: 12
Ingredients
1/2cupblueberries
2bananas, mashed
1/2cupraspberries
2cupsold fashioned oats
1/4cupmaple syrup
2tbspchia seeds
1cupmilk
2largeeggs
1tspcinnamon
1tspbaking powder
Instructions
Preheat oven to 350 degrees. Add bananas, blueberries and raspberries to a 9 x 13 casserole dish and mash with the back of a fork or a muddler.
Add the rest of the ingredients directly to the casserole dish. Stir to combine.
Bake for 30-35 minutes or until the edges look set and the oatmeal doesn't jiggle or look runny.
Allow to cool for 30 minutes before slicing and serving. I like to serve mine with a scoop of yogurt, drizzle of maple syrup and fresh berries on top!
Notes
Mix everything in one dish! This is a one pan berry baked oatmeal recipe, which makes it so convenient! Just mash the bananas and berries first, then add everything into the baking dish before baking.
Don't over bake! This berry oatmeal bake recipe is done once the edges are set and it no longer looks runny. If you over bake, it could turn dry and crumbly.
Let it cool! I know it is tempting, but I recommend letting it cool until warm (not piping hot). If you cut into it when it is just out of the oven, it will not cut into nice squares!
Customize your toppings. This oatmeal is delicious on its own, but I love topping it with things like plain yogurt, a drizzle of maple syrup, fresh berries, and crushed nuts!
