Berry Spinach Salad with Berry Balsamic Vinaigrette
Super colorful and light Berry Spinach Salad drizzled with a Berry Balsamic Vinaigrette. Loaded with berries, candied walnuts and feta cheese. Takes less than 30 minutes to throw together!
Fill a large bowl with spinach. Top with berries, candied walnuts, red onion and feta cheese.
Drizzle with prepared vinaigrette and serve immediately.
Berry Balsamic Vinaigrette
Add all of the ingredients to a blender. Pulse until combined and the dressing is thick and smooth. If the seeds bother you strain through a sieve before serving. Store leftover dressing in the refrigerator.
Candied Walnuts
Preheat oven to 300°F Whisk one egg white until frothy. Add in brown sugar, cinnamon, salt, and pepper. Toss to combine.
Add in 2 cups of walnuts. Toss to coat thoroughly.
Spread the mixture evenly on a baking sheet lined with parchment paper or silicone mat.
Bake for 20 minutes. Remove from the oven and allow them to cool completely. (They will continue to crisp up as they cool)
