Brownie Energy Bites
Brownies… but make them snackable. These brownie energy bites are rich, chocolatey, and perfect for a quick sweet treat straight from the fridge.

Ingredients
1cupalmond flour
1/2cupcreamy peanut butter
1/2cupground flax seed
4tbsphoney
2tbspunsweetened cocoa powder
3tbspwater
sea salt for sprinkling
1cupdark chocolate
Instructions
Combine all of the ingredients in a medium bowl. Stir to combine. If mixture looks too try add a bit more water (1/2 tablespoon at a time).
Place in the refrigerator for 15-30 minutes so they are easier to roll. Roll bites, I usually get between 10-12.
Melt chocolate: Add chocolate to a microwave safe bowl and microwave for 30-60 second intervals until melted.
Dip energy bites into melted chocolate and sprinkle with sea salt. Place back in the fridge or freezer to firm up the chocolate then enjoy for up to a week! You can even freeze these as well!
Notes
If mixture is too dry. Add water 1 tablespoon at a time until the mixture holds together when pressed.
If mixture is too sticky. Wet your hands slightly before rolling to prevent sticking.
Make bars instead. Press the mixture into a parchment-lined square pan, refrigerate, and cut into no-bake energy bars.
Roll in toppings. Try rolling the bites in crushed nuts, mini chocolate chips, or shredded coconut for extra texture.
