Creamy Boursin Orzo
This Creamy Boursin Orzo is a rich and creamy one-pan wonder that’s packed with flavor! The orzo cooks right in a savory mix of broth and milk, soaking up every bit of that creamy goodness. And Boursin cheese, fresh spinach, and a touch of lemon zest are the perfect flavorful additions. It’s an easy weeknight side—or even a meatless main—you’ll want to keep on repeat.
Melt butter in a large skillet over medium high heat. Add in the onions and orzo and saute for 3-4 minutes or until the pasta and onions start to get some color on them.Add in garlic and cook for an additional minute.
Pour in the milk and chicken broth. Add in the boursin cheese and stir to break it up.
Bring the mixture to a boil then reduce to a gentle simmer and cook uncovered for 10 minutes. (It's important to stir every 2-3 minutes to make sure the pasta isn't sticking to the bottom)
Once the pasta is al-dente remove from the heat and add in the parmesan cheese and spinach. Stir to wilt the spinach. Season with salt and pepper to taste and enjoy!
