Cucumber Mint Lemonade
Cucumber Mint Lemonade combines the crisp, hydrating flavors of cucumber with the cool, invigorating taste of mint, all balanced by the tart sweetness of freshly squeezed citrus! This refreshing drink is perfect for hot summer days, and offers a wonderful twist on classic lemonade!
Ingredients
- 1 large cucumber, cut into quarters
- 1/2 cup mint
- 1/2 cup honey
- 1/2 cup lemon juice
- 1/2 cup lime juice
- 2 cups water
- 2 cups sparkling water
Instructions
- Add cucumber, mint, honey, lemon juice, lime juice and 2 cups of water to a high powered blender.
- Starting on low blend then work your way up to high. Blend for 30-60 seconds or until the cucumber and mint are all pulsed up.
- Using a sieve strain out the remaining chunks / pulp.
- Add the liquid to a large pitcher and top with the sparkling water. You can also top each glass of lemonade with sparkling water just before serving.
- Garnish with some cucumber slices and a couple sprigs of mint!
