Eggnog French Toast Bites
Tiny bites, big flavor! These Eggnog French Toast Bites are soft, custardy, and perfectly spiced with holiday cheer. Tossed in sweet pumpkin pie sugar and ready in minutes, they’re the ultimate cozy breakfast or festive treat!
Add eggs, eggnog and vanilla to a medium shallow bowl. Whisk to combine.Add in the cubed bread and toss to coat the bread in the egg custard.
Heat a large skillet over medium high heat. Add in butter.Once melted add in the bread and cook for 2 minutes or so on each side. I like to keep them moving so they get golden brown all over.
Combine pumpkin pie spice and sugar in a shallow bowl.Immediately transfer the French toast bites to the spice sugar mixture and toss to coat the bites in the sugar.
Serve immediately with maple syrup for serving, if desired.
Notes
Use thick, sturdy bread. Brioche or challah works best, cubed slices hold up in the eggnog custard without falling apart.Cut the bread evenly. Try to keep the cubes roughly the same size so they cook evenly and get golden all over.Keep the pan moving. Stir or shake the French toast bites gently as they cook to get a golden-brown crust on all sides without burning.Coat While Hot. Toss the bites in the pumpkin pie spice and sugar mixture right after cooking so the warm bites absorb the flavors and the sugar sticks perfectly.
