Gorgonzola Gnocchi with Shrimp features tender potato gnocchi and succulent shrimp all tossed in a creamy, cheesy gorgonzola sauce! This dish is easy enough to whip up for an easy weeknight meal, yet impressive enough for a weekend dinner party!
Bring a large pot of water to a boil.Cook gnocchi according to package instructions. Mine took about 2-3 minutes. Drain and set the gnocchi aside.
Heat a large skillet with 1 tbsp of olive oil over medium high heat. Add in shrimp and saute for 3-4 or until the shrimp is no longer opaque.Remove the shrimp from the pan and set aside.
Add the remaining tablespoon of oil to the same skillet. Stir in onions and saute for 3-4 minutes or until they start to soften and get some color. Add in garlic and cook for 1-2 additional minutes.
Stir in heavy cream and milk and bring to a simmer. Simmer for 2-3 minutes then stir in the gorgonzola cheese and parmesan cheese. Stir until the cheese has melted and the sauce is thickend.Season with salt and pepper to taste.
Add in the cooked gnocchi and shrimp and toss to coat them in the sauce.Serve immediately with fresh chives for garnish. Enjoy!
