Ingredients
3cupscups shredded cooked chicken (I used rotisserie)
1/2cupcelery, diced
1/4cupred onion, diced
2tspdijon mustard
1tbsplemon juice
2tsphoney
2tspdried dill or fresh if you have it!
1/2cupgreek yogurt (full fat prefered)
1/2cupgrapes, halved
salt and pepper, to taste
Optional Add In's
chopped nuts
poppy seeds
Instructions
Add all of the ingredients to a large bowl.
Toss to combine then season with salt and pepper to taste.
Serve as a melt, with bread on salad or as a lettuce wrap!
Notes
If you don't have rotisserie or leftover chicken on hand, you can cook chicken breast in the air fryer or instant pot for quick and delicious shredded chicken!
Greek yogurt chicken salad tastes best when made with full fat Greek yogurt! The fat in the yogurt balances out the tanginess and will create the creamiest and most flavorful salad. If you use low or non fat yogurt, add a dash of olive oil to the mix to a bit of added fat to balance out the flavors!
