Ingredients
Healthy Carrot Cake Cookies
2ripebananas, mashed (the riper the sweeter they are)
2cupsold fashioned oats
1/2cupcreamy peanut butter
1tspcinnamon
3tbspmaple syrup
1/2cupraisins
1/2cupcarrots, shredded
Healthy Cream Cheese Icing (Optional)
8ouncescream cheese, softened
1/3cupgreek yogurt, room temperature
3tbspmaple syrup
1tsplemon juice
1tspvanilla extract
Instructions
Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
In a large bowl add in the bananas and mash using the back of a fork or muddler.
Next add in the oats, peanut butter, cinnamon, maple syrup, raisins and shredded carrots.
Stir to combine. Portion out large tablespoon size cookies. (I usually get around 12 cookies)Using the back of a fork press the cookies down to flatten them.
Bake for 8-10 minutes or until the cookies look set.Allow them to cool on the baking sheet for 5 minutes before removing then. The cookies are fragile when they are soft.
Transfer to a cooling rack to cool completely then frost with the optional cream cheese frosting and enjoy!
Healthy Cream Cheese Icing
In a medium bowl combine softened room temperature cream cheese, yogurt, maple syrup, lemon juice and vanilla. Whisk to combine. If the cream cheese or yogurt is not room temperature the mixture may clump up. Continue to whisk until it is smooth and creamy.Set aside until you are ready to frost your cookies.
