Lemon Spinach Orzo
This one pan creamy Lemon Spinach Orzo is an easy, light dinner or an amazing side dish! The lemon zest and juice lift the flavor creating a bright and light sauce that coats the orzo pasta perfectly. If you haven't jumped on the orzo train yet, now is the time!

Ingredients
2tbspunsalted butter
4clovesgarlic, minced
1cuporzo
1 1/4cupmilk
1 1/4cupchicken broth
1/2tsplemon zest
1/2tspdried oregano
4cupsspinach
1/2lemon, juiced
1/2cupParmesan Cheese
salt and pepper, to taste
Instructions
Heat butter in a large skillet over medium high heat. Add in orzo and toast for 2 minutes stirring continuously until the pasta starts to get a bit golden.Add in garlic and cook stirring often for about a minute.
Stir in the milk, chicken broth, lemon zest and dried oregano. Bring to a simmer and cover. Simmer for 12-13 minutes or until the pasta is tender.Add in the spinach and cook until wilted, 1-2 minutes.
Remove from the heat and add in Parmesan Cheese and lemon juice. Season with salt and pepper to taste. Serve immediately and enjoy!
Notes
Don't forget to toast your orzo! Toasting orzo before cooking gives it a nuttier flavor, keeps the texture firmer, and helps it absorb sauces better.
Don't have spinach on hand? You can substitute the spinach with baby kale or another hearty green. You can also add additional vegetables like zucchini or broccoli!
