One Pan Creamy Gnocchi

Ingredients
1tbspolive oil
1lbground beef
1smallonion, diced
6clovesgarlic, minced
1/4cupwhite wine, or chicken broth for deglazing
14.5ouncesfire roasted tomatoes, with juices
2tsptomato paste
1tspItalian seasoning
1/2cupheavy cream
16ouncesgnocchi
1/2cupparmesan cheese, grated
salt and pepper, to taste
chopped parsley, for garnish
Instructions
Heat olive oil in a large skillet over medium high heat.Add in beef and cook for 3-4 minutes breaking up the meat as it cooks.
Stir in the onions and cook for 2-3 minutes. The onions should start to get some color on them and the beef should no longer be pink.Add in the garlic and cook for 1-2 minutes.
Pour in the white wine or broth if using and deglaze the pan by scraping the brown bits "fond" off of the bottom of the pan.
Add in the fire roasted tomatoes, tomato paste and italian seasoning. Bring to a simmer and cook for 3-4 minutes.
Stir in heavy cream and gnocchi, cover and cook for 5-6 minutes or until the gnocchi is tender and the sauce is thickened.
Remove from the heat and stir in the parmesan cheese. Season with salt and pepper to taste then serve immediately with fresh parsley for garnish!
