Pear Salad

A drizzle of homemade honey mustard dressing ties everything together, creating the perfect side dish or a light lunch.

Ingredients
Pear Salad
4cupsspinach or arugula
3tbspblue cheese, crumbled
2ripepear, sliced
1/4cupred onion, thinly sliced
1/4cupcandied walnuts, recipe follows
honey mustard dressing, recipe follows
Candied Walnuts
2cupwalnuts
1/8tspsalt
1/8tsppepper
1/2tspcinnamon
1/4cuplight brown sugar
1egg white
Honey Mustard Dressing
1/4cuphoney
1/4cupwhole grain mustard
1/4cupmayonnaise
3tbspred wine vinegar
1/4tspsalt
1/8tsppepper
Instructions
Candied Walnuts
Preheat oven to 300°F Whisk one egg white until frothy. Add in brown sugar, cinnamon, salt, and pepper. Toss to combine.
Add in 2 cups of walnuts. Toss to coat thoroughly.
Spread the mixture evenly on a baking sheet lined with parchment paper or silicone mat.
Bake for 20 minutes. Remove from the oven and allow them to cool completely. (They will continue to crisp up as they cool)
Honey Mustard Dressing
Combine all ingredients in a mason jar. Cover tightly with lid, and shake for 30 seconds to a minute.
Store in fridge for up to 3 months.
Assemble
Add spinach to a large bowl or for single servings divide the spinach between 4 bowls.Top with blue cheese, pear, red onion and candied walnuts.
Serve with honey mustard dressing drizzled on top!
Notes
Pick the best ripe pears: Pears are the star of the show so a ripe quality pear makes all the difference! Use ripe but firm pears. You want pears that are sweet and juicy, but still hold their shape when sliced. Bartlett or Anjou pears work great.Assemble the salad just before serving. To keep the spinach fresh and prevent it from wilting, wait to add the dressing until right before serving.
