Ingredients
Pork
1lbpork tenderloin, cut into bite sized cubes
1tbsplight brown sugar
1tbspsesame oil
2tbsplow sodium soy sauce
2tspcornstarch
Fried Rice
2tbspbutter, divided
3largeeggs, whisked
2mediumcarrots, diced
1small onion, diced
3clovesgarlic, minced
1cuppeas
4cupscooked and cooled white rice
3tbsplow sodium soy sauce
2tbspoyster sauce
1tspsesame oil
Instructions
Marinate Pork
Add cubed pork, brown sugar, sesame oil, soy sauce and cornstarch to a medium bowl.Toss to combine and let marinate at room temperature for 10-15 minutes.
When you are ready to cook heat oil in a large skillet over high heat.Add in pork and let it cook undisturbed for 2 minutes flip then cook for an additional 3-4 minutes or until its golden brown on the outside and cooked through on the inside.Remove from the pan and set aside.
Fried Rice
To the same skillet heat 1 tablespoon of butter into a large skillet. Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
Add the remaining tablespoon of butter into the pan. Add carrots and onion to the pan and cook until tender, 3-4 minutes. Stir in garlic and cook for an additional minute.
Add in the cold rice and peas and sauté for 3-4 minutes. The rice should brown up a bit.
Add the eggs and pork back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through. Serve immediately with green onions for garnish, if desired.
