Add garlic, lemon juice, parsley, thyme, oregano, honey and dijon mustard to a small jar or bowl. In a slow steady stream pour in olive oil whisking vigorously. You will begin to see your dressing thicken up and become smooth and glossy. Season with salt and pepper to taste.
Serve with your favorite salad recipe and enjoy!

Note: After the dressing is in the fridge it may become gelatinous take out a couple minutes before serving and shake vigorously or whisk until smooth again.
