Ingredients
12ounceschicken sausage, sliced
1mediumsweet potatoes, peeled and cubed
1mediumred pepper pepper, diced
2cupsbroccoli, cut into florets
1mediumonion, large diced
3tbspolive oil, plus more for drizzling
1tsponion powder
1tspgarlic powder
1tspItalian seasoning
salt and pepper
Instructions
Preheat oven to 425 degrees. Drizzle olive oil onto a baking sheet, set aside.Cut up your veggies and chicken sausage. Add them all to the baking sheet. Drizzle with olive oil and seasonings. Toss to make sure everything is coated in seasoning.
Bake for 15 minutes. Toss then bake for 15 additional minutes.Remove from the oven and sprinkle with salt and pepper to taste.Serve over rice, mashed potatoes or with a fried egg on top!
