Sloppy Joe Stuffed Sweet Potatoes

Ingredients
Baked Sweet Potatoes
3largesweet potatoes
olive oil for drizzling
butter, for serving
salt and pepper
Sloppy Joes
1tbspolive oil
1largeonion, diced
1largebell pepper, diced
1lbground beef
4clovesgarlic, minced
1/2cupketchup
8ouncestomato sauce
1tbspWorcestershire sauce
1tbspapple cider vinegar
1tbsplight brown sugar
2tspdried mustard
1/4tspsalt
1/4tsppepper
For Serving
green onions, for garnish
Instructions
Preheat oven to 425 degrees. Using a fork poke holes in the sweet potatoes to allow steam to escape.
Drizzle with olive oil then bake for 40-50 minutes or until the potatoes are fork tender.
Meanwhile heat olive oil over medium high heat.Add in onions and bell peppers and saute for 3-4 minutes to soften and develop some color.
Add in ground beef and cook for 3-4 minutes or until the ground beef is no longer pink.Stir in garlic and cook for 1-2 minutes.
Next add in the ketchup, tomato sauce, Worcestershire sauce, apple cider vinegar, light brown sugar, dried mustard, salt and pepper.Bring to a simmer and cook for 2-3 minutes or until everything is heated up and the mixture has thickened slightly.
Cut the cooked sweet potatoes in half. I like to add a tablespoon of butter to each potato and a sprinkle of salt and pepper.Then I stuff them with the sloppy Joe mixture. Top with green onions for garnish and serve!
