White Chocolate Oat Cups
These White Chocolate Oat Cups are a no bake treat that combines the rich and sweet flavor of white chocolate with a crunchy, nutty oat mixture and tangy raspberry jam! The combination creates a harmonious balance of flavors, making these a wonderful snack or dessert!

Ingredients
Peanut Butter Oat Layer
2 1/4cupsold fashioned oats
1/2cuphoney
1/3cupcreamy peanut butter
1tspvanilla
1/4cupraspberry jam
White Chocolate Layer
1cupwhite chocolate chips
2tspcoconut oil
12raspberries
Instructions
In a medium bowl combine oats, honey, peanut butter and vanilla.
Spray a muffin tin with nonstick cooking spray.Divide the mixture evenly between the muffin tin pressing the mixture down slightly in the center to create a well.
Add about a tsp of jam into each muffin tin.
Add the white chocolate chips and coconut oil to a small bowl. Microwave in 30 second increments until melted.
Spoon the melted chocolate on top of each oat cup and use the back of the spoon to spread the chocolate.Top each muffin cup with a raspberry while the chocolate is still wet.
Place in the the fridge or freezer for 30 minutes or until the chocolate on top is hardened.
Store leftovers in the fridge for up to a week or in the freezer for up to 3 months!
Notes
Oats: Old-fashioned oats are the best option here. You can use quick oats as well, but they might not hold up as well and they will have a chewier texture
Nut butter: Creamy peanut butter lends a delicious flavor here, but you can use and of your favorite nut butters. Crunchy or smooth work! If you are avoiding peanuts you can use sunflower butter instead
Swap your favorite fruits! I've used blackberry and blueberry jam in these oat cups! You can also swap the fresh raspberries for whatever fresh fruit you have on hand!
