This Lemon Spinach Orzo is loaded with tons of bright flavor.

Heat butter in a skillet over medium high heat. Add in orzo and toast for 2 minutes stirring continuously Add in garlic and cook for about a minute.

Stir in the milk, chicken broth, lemon zest and dried oregano. Simmer covered for 12-13 minutes, or until tender. Add in the spinach and cook until wilted, 1-2 minutes.

Remove from the heat and add in Parmesan Cheese and lemon juice. Season with salt and pepper to taste.
Serve immediately and enjoy!
