This luscious high-protein Blueberry Cottage Cheese Ice Cream combines creamy, protein-rich cottage cheese with swirls of blueberries!

Add cottage cheese, 2 tbsp blueberry jam, honey, lemon juice and vanilla to a high powered blender.

Blend starting on low then working your way up to high until the mixture is smooth and creamy, this will take at least a minute.

Transfer the ice cream mixture to a loaf pan and add dollops of the remaining 2 tbsp of jam. Using a knife swirl in the jam then transfer to the freezer for 4 hours to set.
Serve your ice cream in a cone, bowl, or as an ice cream sandwich with your favorite cookies!
