Blueberry Ice Cream

This Blueberry Ice Cream is a refreshing summer delight made with just 5 simple ingredients!

Combine ingredients

Add cottage cheese, 2 tbsp blueberry jam, honey, lemon juice and vanilla to a high powered blender.

Blend

Blend starting on low then working your way up to high until the mixture is smooth and creamy, this will take at least a minute.

Freeze

Transfer the ice cream mixture to a loaf pan and add dollops of the remaining 2 tbsp of jam. Using a knife swirl in the jam then transfer to the freezer for 4 hours to set.

When ready scoop, serve and enjoy!
