Southwest Chicken Salad 

This Chicken Salad is packed with fresh veggies, juicy grilled chicken, and my homemade dressing!

Marinade chicken

Add the chicken and the rest of the marinade ingredients to a large ziplock bag. Marinade the chicken for at least an hour.

Grill chicken

Preheat the grill to 400°F and spray it with cooking spray. Grill the chicken for 4-5 minutes per side until it reaches an internal temperature of 165°F.

Cut chicken

Transfer the chicken to a cutting board and allow it to rest for a couple of minutes. Slice the chicken into strips and set aside until you are ready to assemble.

Assemble

Divide all of the salad ingredients between 4 bowls. Top with grilled chicken and drizzle with Honey Lime Dressing.

Serve immediately and enjoy!
