It’s time for another salad recipe! And I am super excited about this one. This salad is similar to a traditional Cobb salad, but with a summer spin on it. Grilled chicken and grilled corn get added to this salad, along with crispy bacon, fresh cherry tomatoes, and tangy blue cheese crumbles. Then it’s drizzled with an AMAZING spicy buttermilk ranch dressing loaded with cayenne pepper and tabasco. Yum!
Even better, despite calling for two grilled ingredients, this salad is a breeze to throw together and is something you can make all week long as a healthy lunch or dinner! This salad is a great way to use up any leftovers. If you have leftover grilled corn and chicken this salad will come together in minutes.

This Grilled Chicken Salad calls for a lot of ingredients you’ll find in most Cobb salads like mixed greens, fresh tomatoes, crispy bacon, and diced avocados. But it’s taken up a notch with the addition of tender grilled chicken, charred grilled corn off the cob, and Blue Cheese.
The cherry on top for the recipe is the tangy, spicy buttermilk ranch dressing. It’s the perfect salad!
How To Make Grilled Chicken Cobb Salad
This recipe yields two salads. To assemble, fill two bowls with mixed greens. Top with grilled chicken, corn, tomatoes, bacon, blue cheese, and avocado.
Serve immediately with a drizzle of spicy buttermilk ranch dressing!
How To Make Spicy Buttermilk Ranch Dressing
Combine milk and lemon juice in a small bowl, and allow to rest for 5 minutes. (This is the easiest way to make your own buttermilk and avoid having to buy a big carton to only use once!) Then, whisk in the mayonnaise, sour cream, cayenne, dill, ground mustard, and hot sauce until smooth. Season with salt and pepper to taste, and place in the refrigerator to marinate until time to serve (preferably at least an hour).
Storage and Freezing Instructions
- Store leftover or meal-prepped salad in airtight containers in the fridge for up to 4 days with salad dressing in a separate container to prevent greens from wilting.
- Make the salad dressing ahead of time and store in your fridge for up to 1 month or freeze for up to 6 months.

Ingredients
Chicken Cobb Salad
- 4 cups mixed greens
- 1 cooked grilled chicken breast cubed
- 1/4 cup corn grilled
- 1/4 cup cherry tomatoes halved
- 1/4 cup bacon crumbled
- 2 tablespoons Castello Burger Blue Cheese crumbled
- 1/2 avocado diced
Spicy Buttermilk Ranch Dressing
- 1/4 cup milk
- 1 teaspoon lemon juice
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1/8 teaspoon cayenne peper
- 1/4 teaspoon dried dill
- 1/4 teaspoon ground mustard
- 1 teaspoon hot sauce
Instructions
Chicken Cobb Salad
- To assemble the salad fill two bowls with mixed greens.
- Top with chicken, corn, tomatoes, bacon, blue cheese and avocado.
- Serve immediately with a drizzle of spicy buttermilk ranch dressing!
Spicy Buttermilk Ranch Dressing
- Combine milk and lemon juice in a small bowl. Let sit for 5 minutes.
- Add in mayonnaise, sour cream, cayenne, dill, ground mustard and hot sauce. Whisk to combine.
- Season with salt and pepper and place in the refrigerator until ready to serve. I find it tastes better when it has time to sit, at least an hour.
