This Mediterranean Quinoa Salad is healthy and easy to customize, so it never gets boring!

Combine quinoa, butter, salt, and vegetable broth in a saucepan. Bring to a boil, then cover and simmer for 20 minutes until liquid is absorbed. Fluff and let cool slightly.

Add the rest of the ingredients to a large bowl and toss in quinoa. Season with salt and pepper to taste.
Serve immediately or store in an airtight container in the refrigerator for up to 4 days.
