Cranberry Orange Muffins

These fresh & vibrant Cranberry Orange Muffins are the perfect way to start your morning!

Mix dry ingredients

Preheat oven to 425F. Grease a muffin tin with non stick cooking spray, set aside. In a bowl combine flour, baking powder, baking soda, salt and sugar.

Mix wet ingredients

In a medium bowl combine the yogurt, buttermilk, eggs, orange juice and vanilla. Whisk to combine.

Make batter

Pour the wet ingredients into the dry ingredients and fold (making sure not to over-mix). Fold in the cranberries and the orange zest.

Divide in muffin tins

Divide the muffin batter between the muffin tin. (It's ok to fill these up all the way). Sprinkle with extra sugar on top, if desired.

Bake

Bake for 5 minutes then without opening the oven door lower the oven temperature to 350F. Continue cooking at 350F for 10-12 minutes.

Make glaze

Combine orange juice, orange zest and powdered sugar in a small bowl. Whisk to combine then set aside.

Serve as is or with the optional orange glaze. Enjoy!
