Banana Chocolate Chip Muffins

Banana Chocolate Chip Muffins are warm and comforting, with all the flavors of your favorite banana bread in a convenient muffin form!

MIX DRY INGREDIENTS

Preheat oven to 375 degrees. Grease a muffin tin with nonstick cooking spray. In a medium bowl combine the flour, baking powder, cornstarch and salt, set aside.

MIX WET INGREDIENTS

Add the bananas to a large bowl and mash with the back of a fork. Add in the melted butter, sugar, oil, vanilla and egg. Stir to combine.

ADD CHOCOLATE CHIPS

Add the dry ingredients to the wet ingredients and fold just until combined. It's ok if there are still streaks of flour. Stir in the chocolate chips.

BAKE

Divide the muffin batter between the muffin tin. Sprinkle with sugar on top. Bake for 18-22 minutes or until the tops look golden brown and set.

Allow them to cool in the muffin tin for 10 minutes then remove and cool completely on a wire rack.  Serve and enjoy!
