    • Flour: All-purpose flour works great here. If you need to make gluten-free banana chocolate chip muffins, use a replacement flour that has a 1 to 1 ratio!

    2. Measure Dry Ingredients: In a medium bowl, combine the flour, baking powder, cornstarch and salt. Set aside.
    3. Mash Bananas: Add the bananas to a large bowl and mash with the back of a fork.

    1. Combine Wet Ingredients: Add in the melted butter, sugar, oil, vanilla and egg. Stir to combine.

    1. Add Dry Ingredients: Add the dry ingredients to the wet ingredients and fold just until combined. It’s ok if there are still streaks of flour. Stir in the chocolate chips.

    1. Divide & Bake: Divide the muffin batter between the muffin tin. Sprinkle with sugar on top. Bake for 18-22 minutes or until the tops look golden brown and set.

    • The riper the banana, the better! You want to use the bananas that have sat on your counter a little too long. They are sweeter and softer, and therefore work great in these muffins!
