These Brownie Bites are soft, chewy and fudgey.

Preheat oven to 350F. Spray a mini muffin tin with cooking spray. Add butter to a saucepan and cook over medium heat until light brown / caramel in color, 5-10 minutes.

Pour browned butter into a bowl along with both sugars, cocoa powder, salt, instant coffee and baking powder. Stir until combined and allow to rest for 5 minutes.

Stir in the eggs and vanilla and mix until batter has a nice sheen to it.

Fold in the flour and stir until combined. (Do not over mix). Fold in the chocolate chips.

Spoon the batter into the prepared pan and bake for 12-15 minutes or until the tops look set and a toothpick comes out mostly clean.

Let the brownie bites cool in the pan for 10 minutes then run a knife along the edges to release it from the pan. Place on a cooling rack to cool completely.
