Chocolate Cheesecake

This soft and creamy Chocolate Cheesecake is a must for any chocolate lover.

MAKE CRUST

Preheat oven to 350 degrees. Grease a 9-inch spring form pan with butter and set aside. Add crushed Oreo's and butter to a medium bowl and mix until combined.

BAKE CRUST

Press Oreo crumbs into the prepared pan and bake for 8 minutes. Take out of the oven and allow it to cool.

MAKE BATTER

In a stand mixer with the paddle attachment beat cream cheese for 2-3 minutes. Add in sour cream, sugar, eggs and vanilla. Mix until combined. Scrape the sides of the bowl as needed.

ADD CHOCOLATE

Add in cooled chocolate and mix until combined.

BAKE

Pour the cheesecake mixture into the cooled pan and bake for 1 to 1h 10minutes until the top sets. Once baked, run a knife around the edge to prevent cracking. Cool on a wire rack in the pan, then refrigerate for at least 8 hours or overnight to set.

POUR CHOCOLATE

A couple of hours before serving prepare ganache and spread onto cheesecake.

REFRIGERATE

Place back into the fridge to allow the ganache to set.

Slice and serve!
