Chocolate Covered Cheesecake Bites

These chocolate covered cheesecake squares are so easy to make and delicious. Made with a graham cracker crust, these mini cheesecake bites are the best because they are rich with chocolate!

MAKE CRUST

Preheat oven to 350°F. Line a baking dish with foil. In a bowl, combine crushed graham crackers and melted butter.

BAKE

Spread the graham cracker mixture into the pan and bake for five to six minutes.

CREAM

Beat the cream cheese in a bowl with a mixer.

ADD VANILLA

Next, add the eggs, vanilla, and sour cream. Mix until combined.

BAKE

Transfer the mixture to the baking pan and bake the cheesecake for 35-40 minutes.

CHILL

Chill the cheesecake by freezing overnight until hardened. Lift the frozen cheesecake out of the pan and remove from foil.

CUT

Cut the cheesecake into 36 squares. If it becomes too soft, freeze again.

MELT CHOCOLATE

Melt the chocolate in a bowl, then dip the cheesecake bites into the chocolate.

BAKING PAN

Transfer the dipped cheesecake bites to parchment paper.

HARDEN

Chill the cheesecake bites until they are firm. Enjoy!
