Focaccia Muffins

These Focaccia Muffins are quickly going to become your new obsession!

Activate yeast

Preheat the oven to 200°F and grease a muffin tin with cooking spray. In a stand mixer with the dough attachment, mix water, sugar, and yeast, and let sit until foamy.

Knead dough

Add in flour, salt and 1tbsp olive oil. Mix until the dough begins to pull away from the sides and forms a sticky ball. If it is not pulling from the sides add a bit more flour.

Proof dough

Pinch off pieces of dough and divide them between the muffin tin. Turn off the oven and place the muffin tin in the oven for 20 minutes to rise.

Preheat oven

Remove the muffin tin from the oven and increase the oven temperature to 400 degrees.

Add seasonings

Heat 2tbsp of oil in a saucepan. Add garlic and cook for 2-3 minutes. Using your fingertips make indents over the top of each muffin. Drizzle the garlic oil on top and fresh rosemary.

Bake

Bake for 12-15 minutes or until golden brown! Allow them to cool for a couple minutes in the pan before transferring to a wire rack to cool complety.

Serve with more sprigs of rosemary and coarse kosher salt for serving!
