Green Rice 

This Green Rice also known as “Arroz Verde” is delicious and easy to make!

Blend

Add the spinach, jalapeno, poblano, onion, garlic and chicken broth to a food processor fitted with the blade attachment. Pulse for 2 minutes.

Toast rice

Heat butter and olive oil in a large cast iron skillet over medium high heat. Add in rice and cook until the rice gets toasted and golden brown 3-4 minutes.

Add sauce

Add in the pureed peppers and onion mixture to the pot. Cook for 1-2 minutes.

Simmer

Add in milk and bring to a simmer. Cover and simmer for 15 minutes or until all of the liquid is absorbed.

Add herbs

Add in cilantro, parlsey and lime juice. Season with salt and pepper to taste.

Serve immediately and enjoy!
