This Grilled Panzanella Salad will be your new go to side dish for Summer!

To begin, toss your vegetables in the olive oil and season with salt and pepper.

Preheat grill to medium high heat. Spray the grill with nonstick cooking spray. Place veggies on the grill. The vegetables will take about 7-10 minutes to cook.

Cut the grilled veggies into bite size pieces.

To make the vinaigrette whisk together the vinegar, olive oil, lemon juice, parsley and oregano.

In a bowl combine the vegetables and baguette. Drizzle with the vinaigrette and toss to combine. Sprinkle with parmesan cheese and season with salt and pepper.
Serve immediately and garnish with extra parsley, if desired.
